Introducing Newly Appointed Executive Sous Chef

Ciao! Bringing with him an easy laugh and gentle disposition, newly appointed Executive Sous Chef, Chef Filippo Giunta is DoubleTree by Hilton Kuala Lumpur’s newest recruit, set to be Executive Chef Eric Siew’s right hand man.
Born in Palermo, the liveliest town in Sicily, it is easy to see where Chef Filippo gets his jovial demeanor from. His passion for food stems from the deep rooted Sicilian tradition of big weekend gatherings with his family. As a boy, he used to watch wide-eyed as platters of celebrated feast foods are being brought out from his grandmother’s kitchen. Today, the tradition lives on with him bringing his favourite Sicilian recipes along with his 21 years of culinary experience to the kitchens of DoubleTree by Hilton Kuala Lumpur.
Chef Filippo started his culinary career in traditional trattoria restaurants in Sicily 1994 before moving to London as Curzon Restaurant’s Chef de Partie. He then joined the ultra chic Yauatcha Restaurant London where during his tenure as Chef de Partie, the restaurant was awarded with one Michelin star. After restaurant stints, Chef Filippo ventured into the hotel industry in 2007 as Sous Chef de Cuisine and thereafter moving to India to be the Italian Head Chef in The Oberoi Hotel, New Delhi. Prior to his appointment in DoubleTree by Hilton Kuala Lumpur, Chef Filippo was the Italian Head Chef at The Saujana Hotel Kuala Lumpur.
In his new role as Executive Sous Chef, Chef Filippo’s key responsibilities consist of overseeing all aspects of kitchen operations for the success of the hotel. His main goal is also to participate in the development and implementation of business strategies for the kitchen that are aligned with the hotel’s overall mission, vision, values and strategies, including ensuring customer satisfaction for each of the five dining outlets, including the award-winning Makan Kitchen and Tosca, Trattoria Italian Restaurant. He aspires to introduce healthy ingredients into the menus he creates whilst maintaining rustic, hearty recipes with good quality local produce as well as specific products that comes only from his home country. In his spare time, this proud and cheerful Sicilian loves nothing more than spending time with his family and cooking for them his favourite traditional oven-baked lasagna.
