New Executive Chef in the House!

Introducing the newly promoted kitchen chieftain at DoubleTree by Hilton Kuala Lumpur!

DoubleTree by Hilton Kuala Lumpur is proud to announce the promotion of Eric Siew to Executive Chef from his previous role as Executive Sous Chef. A creative chef with a strong belief in delivering classic flavours with modern twists, Chef Eric has been with DoubleTree by Hilton Kuala Lumpur since 2010 having actively contributed to many exciting initiatives, including 2014 Tosca Goes Ocean-Friendly, which focuses on seafood sustainability practices within a restaurant; cooking for charity including 2014 Gala Dinner for World Chefs Without Border on International Chef’s Day; and being featured in Australia Network on “2014 Chef on Tour” as 8 Asian Chefs selected for a culinary road tour to review Australian produce for a Victorian Product Showcase in Melbourne, Australia.

1. When did you realise you wanted to be a chef ?
When I read cookbooks instead of textbooks during my school years. It fuels my curiosity to know what ingredients come together to make a dish and how each ingredient complements the other to ensure a satisfying merge of distinct flavours and textures.

2. Where are some of your favourite food haunts ?
Hawker fare at Restoran O&S at Paramount Garden. For a nasi lemak fix, SS2 pasar malam. After a long day’s work, I head to Bangsar for one of the most impeccable speakeasies in town and for the best lamb curry, it’s found in my dad’s kitchen. Can’t tell you where, its KL’s best kept secret lah.

3. What are your 3 must have ingredients in the kitchen ?
- Eggs for its versatility
- Wines to add a flavourful touch
- Thai basil for its adaptability to any cuisine

When not in hotel grounds stirring up menus or ensuring impeccable kitchen hygiene, this self-confessed foodie opt for two things: Driving at high speeds in motor rallies for pure adrenaline rush, or fishing for relaxation and quiet reflection.
