Celebrate Ramadhan with Treasured Recipe from Makan Kitchen

“Resipi Ibunda” brought to you by Makan Kitchen Malay Sous Chef Mohamad Zulkarnean who grew up in Sarawak learning the secret of perfecting Malay curries from his mother’s home kitchen.

Udang Masak Lemak Cili Padi
Lemongrass – 2 stalks
Ginger – 4gm
Turmeric – 2gm
Onion – 1pc
Garlic – 4 cloves
Bird’s eye chilies – 6pcs
Medium size prawns – 300gm
Kaffir Leaves – 3 pcs
Tamarind – 1pc
Coconut milk – 100gm

- Sauté the ginger, onion, garlic, turmeric and lemongrass for about five minutes under medium heat and constantly stir it to prevent from burning.
- Add the coconut milk and stir it well allowing it to simmer. Add water if necessary and continue to stir it.
- Add in tamarind, kaffir leaves and the prawns. Stir and allow it to simmer until it cooked.
- Season with salt and pepper. Garnish with chilies and serve with hot rice.
